2 Ripe Bananas
1 cup uncooked quick oats (I use Bobs Red Mill Gluten Free)
¼ c Chopped Walnuts (or nuts of your choice)
Preheat Oven to 350
Spray a cookie sheet with Olive Oil or Pam
Mash Bananas with a fork, combine with Oats in a bowl.
Fold in the Walnuts and place a tablespoon sized cookie on the cookie sheet.
Bake for about 15 minutes.
96 Calories for two cookies
3.3g Fat, 14.5g Carbs, 2.6g Protein, 2.3 Fiber
You can easily turn this exact recipe into pancakes. Just add 2 eggs to the above ingredients, reduce oats to ¼ cup and drop pancakes on a griddle for 3-4 minutes.
