4 oz Riced cauliflower (Costco has large 9 oz bags)
Salt to taste
1/4 C Fat-free Fage greek yogurt
4 T 505 Southwestern Fire Roasted Green Chile
1/2 oz Monterrey Jack cheese
3 oz Deboned rotisserie chicken breast
Steam the riced cauliflower and add salt to taste. Mix the sauce using the greek yogurt, 2 T chile. Spoon this over the riced cauliflower. Top with Monterrey Jack cheese and chicken. Add the remaining chile to the top of the dish.
This is delicious with avocado if you have fat macros to spare! Also is amazing topped with chopped cilantro and jalapeno. Trish makes small 1 oz containers of cilantro and jalapeno to add to meals throughout the week.
