Crock Pot Meatballs


1 pound ground bison

1/4 cup Italian breadcrumbs

1 egg

1 clove chopped garlic


Mix together ingredients and shape into 1 inch balls. Be careful not to overmix. Turn oven on broil. Put meatballs on greased cookie sheet and broil for 2 minutes. Flip meatballs and broil for 2 additional minutes. Place in Crock Pot with a jar of your favorite sauce. (Trader Joe’s spaghetti sauce or Cucina Antica). Cook on low for 4- 5 hours.

Makes 24 meatballs

58 calories, 5.7 grams protein, 3.3 grams carbohydrate, 2.5 grams fat

Use these on spaghetti squash, zucchini noodles, pasta, or sandwiches depending on your macro allotment for the day and eating preference.
