Quick, delicious breakfast option! Make these ahead of time and just “grab and go”!
4 whole eggs
2 slices thick- cut bacon
1/3 cup half and half
14 grams full fat shredded cheese or fat-free
1 oz diced ham
40 gram diced medley of onions, red bell pepper, and green bell pepper
Salt and pepper to taste
Heat oven to 350 degrees. Generously spray mini muffin pan with cooking spray. Beat eggs, half and half, salt, and pepper in medium bowl until blended. Add cheese, diced ham, vegetable medley and bacon bits; mix well. Bake in the center of oven until just set, 12- 15 minutes.
