3-4 lbs pork tenderloin
1/4 cup taco seasoning
1/2 cup orange juice
1/2 cup low sodium chicken broth
1/4 cup lime juice
Shredded regular, low fat- free cheese
Cut the pork into 2-inch sections and coat with taco seasoning. Put in Instant Pot and combine with 2/3 of the mixed liquid. Set Instant Pot to meat setting for 28 minutes. Let Instant Pot natural release for 10 minutes and then quick release the remaining pressure. Shred meat with two forks or a hand mixer. Put the shredded meat on a baking sheet, cover with the remaining liquid mixture, and broil for 4 minutes until meat is crisp. Enjoy on Mission street taco tortillas and add toppings according to your macros!
