1 zucchini(100 grams) or the premade zucchini noodles found at Costco
1 T low sodium soy sauce
1.5 T Yeri-Yeri low sodium teriyaki sauce
1/4 yellow onion, diced
1/2 T olive oil
Spiralize zucchini in a handheld spiralizer. Pat the noodles dry with a paper towel. Heat oil in a skillet over medium heat. Add the onion and cook until translucent (approximately 5 minutes). Add zucchini and then top with sauces. Mix the sauce, zucchini, and onions well. Cook for an additional 5-7 minutes. Plate and serve.
Add shrimp, chicken, or steak for a high protein meal.
