Taco Soup

Ingredients:

1.3 lb 85 percent lean ground beef

Tip: can substitute ground turkey or a lower fat percent to lower calories

1/2 onion, chopped

2.5 cups chicken broth

1 eight oz can of tomato sauce

1 can of Rotel tomatoes

1 15 oz can of black beans, drained

2 T taco seasoning

Directions:

Brown ground beef and onion with salt and pepper to taste. When beef is cooked through, add it to the crockpot with remaining ingredients. Stir. Cook on high 4 hours or 6-8 hours on low.

1 cup of taco soup without toppings

210 calories, 18.5 grams protein, 18.5 grams carbohydrate, 7.1 grams fat
